Some weeks call for a recipe that doesn't need much from you. This is one of them.

These almond flour pistachio cookies use just three ingredients: almond flour, ground pistachios and maple syrup. No butter, no eggs, no refined sugar, and honestly, no real skill required. Mix, shape, bake. That's the whole recipe.

They come out soft in the middle, lightly golden at the edges, and naturally nutty from the pistachios. They also happen to be gluten-free and dairy-free, so they work for most lunchboxes without a second thought.
